Is it taboo to fight for the defenses?  If clans join the defense of a city, I'm assuming that will likely result in them being considered an enemy or target of the faction trying to take over the city?

Generally, it's out of respect for other factions not to join in the defense of a village if you have no previous diplomatic relations with said faction.
