Can't. No humanity to go turn human atm. Didn't even know that was a thing till I looked up a vid on how to do this.

Must have tried like 20 times at least. Individually they are fine but it's pretty much the fire that fucks me up.

May start again with a different char. Knight seems to slow.

Try using the gold pine resin, its effective against dragon family enemies. You will do around 30% more damage atleast.

Upgrade your weapon at the blacksmith, should be able to get it to +5 if you farm some shards. And also gold pine resin if you have those from earlier in the burg.

To get the gold pine resin you need either the Residence Key from the Undead Burg Merchant or the Master Key from the starting gifts. The pine resin is in a chest behind one of the houses. You have to walk through the house to get there. If you go to the staircase with the burning barrel that gets tossed down the stairs at you and turn to your right just before you go up, you should see the chest to the left of the staircase that leads to the Black Knight and the Blue Tearstone Ring.

Ok yeah got it. Went back and managed to get some humanity as well.

Edit:

Ok beat that boss. Basically me being a twat. I had tons of humanity things and didn't realise. I thought when I was picking them up they were automatically going into my humanity, and that I just didn't understand why I was out of humanity so fast. So I actually read what those are, used one, made myself human, summoned Solaire and beat the Gargoyles within a minute. 10x easier than on my own lol.

I did the first titanite demon, capra, butterfly and even gaping before the gargoyles. Also I had completely explored darkroot (tried sif once). Because I'm such a badass.

The only bosses I didn't do alone were Seath and Gwyn. You may think that's intentional, in fact it was more because I didn't wanted to lose humanity and cba to wait for white/gold marks.

Now defeated the dragon. Tried the Capra Demon but I literally enter in through the door and almost get 1 hitted even whilst blocking. Tried following the guides suggestion of going right and then up the stairs but always seem to get caught by the demon and then finished by the dogs so will try him later.

A shield with heavy block should take the edge off the capra fight.  That's any large shield plus the medium "iron round shield".  A heavy block shield will cause any of his single-sword swings to bounce, leaving him open and giving you some breathing room.
WSE2 gives us the key to a wonderful world of butthurt...

Capra demon is a strange boss. Either you're getting owned by it, or you beat it first try. It's really strange. I got it first try, but when i saw others complaining about the difficulty i looked on YT to see how others dealt with it. Turns out defensive players usually beat it first time, while squishy mages/dex guys get owned.

Strength characters with heavy armor usually makes the game quicker. For example, I had an easier time beating the game with my full on str char. rather than with my dex char.

I don't know if this will help you but sometimes not locking on and being able to sprint around bosses/enemies plus being able to approach at different angles besides moving around the circumference or straight forward or back made using things like sprinting attacks and dodge roll attacks a lot easier.

Your starting class is not THAT important unless you're really focused on a min/max build. All characters move at the same speed. If you find you're rolling too slow, you either need more stamina or need to wear lighter armor and/or use a lighter weapon.
