Do them early night EST on like a SAT or SUN and invite EW.
No cav besides donkeys.
No long spear or pikes.

And more catapults.

My biggest mistakes were bringing cav and not laddering the flags so people couldnt even try to cap and not enough catapults I saw like 2............
