My Wishlist is:

Left handed characters (for some interesting fights)
Fully customisable clothing
Ability to create your own family banner
Decent shield bashing
And some form of orders systems, so that generals can order troops around (I heard something about that in the last Devblog)

And that's all... :D

Can I have the option to make my guy left handed?

It would ruin my immersion if you didn't because I'm left handed IRL.

Though it would be fun. People often end up abusing these kind of things in multiplayer games like holding your gun left handed in CS was superior to right handed or the dominance of female characters in M&B competitive scene because they have smaller hit boxes.

Plus, in the Middle Ages being left handed was considered to be a bad thing and was outright discouraged in children, leading to most (if not all) people around that time to be right handed. At most I would consider keyboard support for left-handers, but only to the point of common ease of use, not giving them a deliberate advantage against right handers.
