Well, I don't see this happening outside a mod, but you never know.
As far as anyone knows, turned chesspieces weren't invented yet in this era, turning up only at the end of the next century, but Arabic/Persian pieces were fairly simple and standardised and this style was also still in use in Europe, though figurative works were becoming steadily more popular, from their appearance in probably the 11th century - probably most sets were still in the older style, afaik.
I think there wouldn't be a lot of point in doing it and not using authentic rules. If people wanted to play normal chess, they'd just boot up a dedicated chess game. That said, yes, there are plenty of different rule sets to choose from.
