Chase probably made the Vaegir War Mask + Sarranid Guard Armour combination popular, something which I just cannot comprehend. It looks terrible and yet I see it popping up so many times.

It was popular because it was the go to min/maxer tryhard gear. Back then Sarranid Guard Armor was the best armor in the game stat wise + gloves were X2 weight so you could pack the heaviest for insane body armor for a medium armor setup. Add the "cool" + great stat wise Vaegir war mask + Back when Danish/German were the best weapons in the game and longsword was slower, not to mention that range was more important with the wonky old lolstab anim, and you get the best build possible.

I can't say much for Trendsetters in other classes.. but Pike was definitely made attractive to me by watching Walt_F4 play back in the day. King Itchy when I very first started playing made me want to play an archer.

I can't really think that far back in terms of who started what trend or who was the first to be renown at what class. Tough to say.

Walt_F4 is/was Dexxta.

My theory is that the popularity of the kuyak is partly because of the furry shoulder pads. Makes the character seem slightly more bulky. I'm sure if there was some of that ridiculous WoW style fantasy armor with shoulderpads twice the size of the head a bunch of people would use it.

My 1h/shield hero 4 years ago was Grok, if anyone remembers him on NA side. Grosse Messer, Elite Cavalry shield, red star and crescent banner. That was back when all the 1h guys were using scimitar+huscarl shield, so him wrecking with a Grosse stood out in my mind.

The model looks good, but most importantly it is slightly better than other armors around its price/weight level if you care more about body armor than leg armor. The Light Kuyak in particular.

Morningstar on horseback was first regularly used in cRPG by an EU cav player. Can't quite remember the name, one of the Guards/BD guys, iirc.

Also on your side of the pond, whoever was wearing full black armor, great helmet with hat and a bec (I believe his name was Gorath Goretooth). That guy defined the bec and the black armor.
