They can't call all Latin Americans with Spanish ancestry mestizos because not all Latin Americans with Spanish ancestry have Indian blood in them. The term 'Hispanic' refers to anyone who's ancestry is from a Spanish-speaking country. Latinos/Latinas refer to anyone who's ancestry is from a Latin-American country.

I'm not saying that they all are. Of course there are black Latin Americans and white Latin Americans, and they should be counted as so. But it's ridiculous how in the USA we refer to ANY Amerindian, mestizo, or other mixed race person from Latin America as "Hispanic/Latino" as if it were their race when those terms have nothing to do with race. I'm sure you being Mexican/Peruvian/Costa Rican you're probably mixed race or Amerindian yourself... Nothing wrong with that it's just super ridiculous when someone calls these people Spanish (even the white Latin Americans) when they're not Spanish. Just like these "Italian-Americans" who aren't actually Italian, their ancestors were.
