I spent a couple hours on it yesterday setting up the shape/layout and a couple more today carving attacking it with the Dremel.

Man, the only way to carve a stick is with a knife! Using a power tool just feels like cheating... slowly whittling away with a pocket knife just adds to the love imbued on said stick!
