Well, probably pointless to discuss a situation we haven't witnessed first hand anyway.
But maybe it's my training that let's me doubt that it was an appropriate reaction.
As long as there is a chance to back away and de-escalate a situation and avoid a physical confrontation, I'll take that path.
A fight not fought is always a win. At least in my book.
No matter how well you're trained or how physical strong you are, there is always the chance of a lucky punch, a knife coming into play, suddenly 3 friends of the other guy appearing... The variables are way too many to ever call it a controlled environment.
Self-defence after being physically attacked is a whole different story... and there still is a the question of an appropriate reaction.
I am trained in martial arts, so when I get attacked by a drunkard - let's take Gnjus as an example

- and dislocate his shoulder, break an arm, the German justice will blame and punish me. The argumentation is "You're trained, you weren't necessarily out of your comfort zone in a fight, you should have reacted with less force, doing less damage because your attacker wasn't in a state to do serious harm to you based upon your training!".
Maybe this thought should apply here too?
Panos has been military. He is trained. He is physically superior. Did he react appropriate or did he use too much force considering the probably minor threat?
