Because when a sharp weapon hits someone's neck at high speeds it could decapitate the victim, although it would be pretty hard to do. DUH!

I was always a fierce defender of the need to add a bit more gore to the game, after all, hitting someone on the face with a 5kg axe should be more visual than a simple pinkish tone, but that decap animation is just silly.
