How would this work with custom banners? For example those that don't have 1 background color?

This is the confusing part. It's not about the actual background of the banner, but the back color of the banner. This is one color that has to be specified when creating the banner. If we're talking about a heraldic mail armor, it's the color that is on the back of the armor. For some banners, this is completely different than the background color of the banner. E.g. the native khergit banner has a purple background, but the color on the back of the armor is black. So your tabard would be black, if you used the native khergit banner.

Better now?

By the way, the idea I had for the heraldics without seams worked:

I'm just using a transparent banner that is only opaque around the heraldic symbol, and fades out to completely transparent quickly towards the edges. This leads to problems whenever the banner is displayed in non-blended mode, however, as you can see in the screenshot of the overland map. I have no idea where else this problem could appear. A quick test on shields seemed to be fine.

I've also uploaded screenshots of the coat of plates and vaegir elite armor.

Yeah, those pastel colors do not fit so well with lamellar vest. But you can always choose a banner with a more suitable background, some brown tones or cream or what have you.
