For saving money on cav, I highly recommend pumping your riding points into early attributes, then turning later attributes into the riding.
Keeps you from spending money on horses for those first 24 or so levels.

Always use the rouncey, most cost effective horse for stats.

I like the destrier, personally, for a balance of speed and stamina.  The Arabian is also pretty awesome with its radical dodging ability.

its horrible, my champ arabian pre big nerf patches for it was 45 speed, 56 maneuver

There's just no such thing as a cheap horse. Not IRL, not in cRPG. Still nothing better than galloping into battle though!
