Just the weapon, no shield. What is the best weapon/fighting style?

If we're talking about 1 SLOT weapon (not 1h), then it would be mace, langes messer and fighting axe, as the three have the ability to be used 2h mode, each with its flaws. Amongst the 3 i would say fighting axe, fast enough, damaging and break shields.

This is also my conclusion.
However, I've used nothing but fighting axe since the slot system was introduced and I want to make sure if I've not missed anything. Is there any fighting style that can top a 2hander fighting axe?

Yeah, Italian swords seems to have a chambering sweet spot the size of a barn. I always found it a piece of piss to chamber at will with it. It also has excellent range and speed and MW is a boss.

Mace could be better if you have low ps, but only in that situation. With ps over 5, fighting axe advantage vs. shielders (who would be the ones you face the most as a bowman, i suspect) gives it the edge over mace.

Quarterstaff is pretty badass.

Quarterstaff and shortened spear are both 1 slot polearms. They've got more range than pretty much all the 1h weapons and even the 2h weapons that are single-slot. They have low damage, but are incredibly fast. Between the extra range and ~polestun magic~ I think that if you were dueling a single enemy they'd be the top 1 slot choices.

On the other hand, I enjoy using the langes messer because it looks badass and comes with a nice sheath.
