Either in-game imported music from 1257 AD(collection of medieval movie soundtracks like Kingdom of Heaven, Arn, etc.) or externally some classical music like Liszt, Bach, Schubert or Haydn. Makes you feel peaceful even when being hacked into pieces.

Ah Buxtehude, very nice indeed! Ever tried Giovanni Gabrieli? You should enjoy his compositions if you like Buxtehude.

Pretty much: Age of Empires online soundtracks, Medieval Total War 2 soundtracks and the Age of Mythology soundtracks.
I can't be the only one listening to AoE soundtracks while playing Mount and Blade.
