Not a fan of game but soundtrack is really good, especially Targos theme which is probably the best melody you can hear in games, hands down.

It would take too long to actually go through the soundtracks and pick out my favorites.  Instead, I'll just list the games/series that produced the most memorable music for me.

Chrono Trigger

The Legend of Zelda [all]
Icewind Dale [all]
Baldur's Gate [all]
Final Fantasy [Some, not all, had very good scores.]
DOOM [The leaked Doom was the first game I played on the PC.  The music is nothing special today, but in '92 it really got you into the mood to fight some demons.]

MechWarrior 4 - browse through the related videos, the entire OST is epic!
Unreal Tournament - they just don't make such music for games anymore
Gothic - very, very atmospheric, fits the game perfectly
Chaser - a very underappreciated, low profile FPS game, highly recommended
Dungeon Keeper - one of the coolest intro videos ever
Dawn of War - For the Emperor!
Diablo II - Yeah.

Ahhhh MechWarrior 4 was soooooo epic. I'm young enough for that to have been the first MechWarrior game I played.
Unreal Tournament music was so good they kept it forever xD

DOOM [The leaked Doom was the first game I played on the PC.  The music is nothing special today, but in '92 it really got you into the mood to fight some demons.]

Doom was the first game I played with full PC speaker sound, the nice music is one thing but hearing the 3d sound of grunts and screams of your fallen comrades risen again and other gruesome space monsters around the corner was an impressionable experience to say the least 

Also, Cannon Fodder was the first Amiga game I played and which convinced me of Amiga's superior sound system, and like so many other games was such a disappointment when played on other platforms.This intro song was made by one of the developers. 'Normal' music (as in not computer game music) was pretty much unheard of in a game at this time. Not to mention the sprite photographs in the video.

The Hobbit PC-game from Sierra still has the best overall soundtrack I've ever heard, yet Dungeon Siege I has the best main theme.
