I'd say, keep 200 for yourself as an extra defense precaution, and anything above that, send into the castle.  I'm keeping my cap at 300, and anything more than that goes into the castle.  Usually when I get to about 350-400 I'll transfer 50+ to the castle.

Basically, no. You're almost always better off putting troops into garrison unless you're going to spread them out among many field armies. Here's a neat spreadsheet having to do with troop upkeep. Most field armies start to become inefficient after 500 troops or so.
