Can you be more specific?
On the first one, with killing the unsuspecting and god-awful, anyone who knows how to block can block cavalry. If you don't, you can jump out of the way, or if there is a couch. The only times I've been killed by cavalry is when I am facing the opposite direction, typing, or fighting someone else (I have a habit of watching my back with the view outfit thing, too).
On the second one, I have rarely seen a cavalry pass up on killing the weakest link over the biggest threat. Myself, I dress as a peasant with a cudgel, because I enjoy playing like that (it's funny). All too many times have I seen cavalry straight up charge through a pike or a crossbow bolt in the effort to stab me, which I could have blocked.
And the delayer one? We both know that more often than not it is the cavalry that makes up the game delayers, and among the cavalry it's the horse archers/crossbowmen.
