Hospitallers are part of the Northern Empire, so ATS and TS are their neighbors. I don't think they have much to worry about their Alliance attacking them :

LLJK could send some troops via fallen's land once Hospitalers took the town... sure their allies could help them, but with a coordinated attack on other spots this could be succesfull.

I remember fallens took Grunwald to templars, when templars were at wars with 22nd/drz, they kept the castle until the end of first strat.

I'm not positive, but I would imagine holding a town would be a bigger priority than villages or castles.   And taking back a couple villages for recruitment wouldn't be too terribly difficult either (assuming that all our villages were taken over, which wouldn't happen).
