"Racism" and "racial discrimination" are often used to describe discrimination on an ethnic or cultural basis, independent of their somatic (i.e. "racial") differences. According to the United Nations conventions, there is no distinction between the term racial discrimination and ethnicity discrimination.
Then "racism," according to wherever you got that definition, is a term being used wrongly. Racism should apply to RACE, not culture. Both Jewish and German are not races. I'm a citizen of three countries, and I'm two races. That doesn't mean I have five races LOL...
Saying all those offensive things against Germans or Jews or whatever would be discrimination, not racial discrimination.
