Not exactly what you are looking for, but I recommend checking out Assassin's Creed III if you never played it. Simply for the setting, revolutionary America and the frontiers around Boston and New York City. You can spend many hours simply riding your horse, exploring, and hunting. Hunting is pretty in depth too, with bait, traps, various weapons, tracking animals, using perches.
The rest of the game is pretty cool but the wilderness shit is more immersive then you'll find in any game besides Red Dead Redemption, which is a totally different environment. You even play as a half Indian with a tribe. Sadly all your interactions outside the tribe end up being with white devils who want your land but hey, America.
