My first option would be this : I would love to be a byzantine Droungarios and have under my command Katafraktous.

Well some knight/lord having his own castle giving big feasts, inviting other knights lords, attending jousting tournament. Not from any specific country, probably a british knight in the high medieval period.

Or some muslim general or a scholar when the muslims just had Cordoba, no doubt those times were some of the best times for the muslims.

Yeah... back then everyone was malnourished, filthy and lived in fear. A lot of people around the world are still living that way today, unfortunately. But I count myself lucky that I haven't had to be one of them, yet.
