So basically this is all pulled from the ArcheAge Wiki but still nice to see, its a good overview and shows what you need for what fish and item.

loginWith the new patch you can no longer make Lures anymore, same goes for the Chum, you have to buy them through a Blue Salt Vocation Vendor.
they are pretty cheap but ofc for higher ones you need more then the low ones and also they only work with one rod, for example you can't use Yellow lures on an Archeum Fishing rod.
To start sportfishing you need to find an area with seagulls or birds around them, they will be very distinct and noticeable

loginNow to start fishing is very easy, you just need to know when to push the right buttons.
As follows this is your skillset and the skills you use for Fishing:

loginFishing: Starts normal fishing, this can be done anywhere if you have enough Worms, this also allows you to get Waterlogged Chests to open and find several items.
Sportfishing: Starts Sportfishing, this requires a Schooling spot of fishes, as said its an area with seagulls or birds around them.
Stand Firm Left: Use this skill whenever the fish turns left
Stand Firm Right: Use this skill whenever the fish turns Right
Set Free: Use this skill whenever the fish tries to swim away
Big Reel In: Deal huge amount of dmg to the fish
Reel In: Do little amount of dmg to the fish
Fishing Spots: resets every ~30min, that means they can apear/desapear or change tipe of fish every 30min.
Fishing proficiency: Every 1000 Proficiency increases your damage with reels with 2. That means difference between 0 and 50k prof. is: +100 dmg on fish damage skills, with same lvl rod.
Degrees of Fish(worth): 1. Carp/Eels (most cheapest fish/catch found in Freshwater Fishing)
2. Arowana (A bit more then Eels, also found in Freshwater Fishing)
3. Bluefin Tuna (Cheapest deep sea fish)
4. Sturgeon (Higher then Tuna)
5. Sailfish (Best alternative if there isn't any Marlin around, these fishes bring about 2/3 of the price of Marlin)
6. Marlin (Best fish to catch In Game, highest amount of gold)
When you are in combat with the fish you will see when it has a certain buff up what you need to click, for example if you see the icon of a Big Reel in then you press that skill to do dmg.
Same goes for the other skills when they are shown on the fish itself.
