I've been an avid Total War player for many years now, I owned Shogun and Medieval, which I played a little, but they never really hit it with me. Then Rome: Total War came and changed me forever. Been a small history geek ever since. I believe I've spent at the very lest around 3000 hours in to playing Total War games(only campaign though) My favourite title nowadays is Medieval 2, for the rich variety of mods, but enough about me. I've posted this list in the other thread, but I thought it'd be nice have a thread for mods in general 'round these parts, so here we go.
All of these mods are complete mods. By complete mods, I mean that they are mods that change tons of things in the game with one install.
Feel free to add your own mod recommendations in this thread and discuss or ask questions about some of the mods. (If you're going to discuss one mod at length, then starting another thread might be a winning option)
Here we go:
For Medieval 2: Kingdoms(order of badassery, top 3 are equal):Stainless Steel - Enhanced native campaign, basically.
Third Age - Lord of the Rings.
Broken Crescent - Eastern Roman Empire to Hindus. Medieval time period.
The Last Kingdom - Dark ages mod. British Isles.
Deus Lo Vult - Enhanced Native
THERA - Completely made up mod mixing many different cultures in to one map. Quite amusing.
Paeninsula Italica(beta) - Start of the Roman empire. Situated on the Italian Peninsula, in case your stupid.
Rome: Total War:Roma Surrectum - Epic mod, nuff said.
Europa Barbarorum - Also an excellent mod. Both of these are enhanced native in essence.
Empire: Total War:Darthmod - Enhanced native mod. Adds a ton of new troops 'n stuff.
Shogun 2: Total War:Darthmod - Copy pasta. Enhanced native mod. Adds a ton of new troops 'n stuff.

Napoleon: Total War, but I haven't got around to trying that yet.
Oh,
1648 - 30 years war is supposedly good, but it hasn't been translated yet. So waiting for that. They got deployable cannons on walls. For Medieval 2: Kingdoms
Just hoping that some of the mods I'm waiting for would be released at some point. Like:
Shizoku no Sensō (development cancelled, custom battle mode released)

Europa Barbarorum is the best mod I've played for any Total War game, hands down, and probably one of the most impressive full-conversion mods for any game out there.
Three other high-quality mods I think deserves mention:
For King or Country (MTW)
Historical mod set during the English Civil War (17th century).
The Fourth Age (RTW)
Lore-accurate (as in based on the books not the movies) mod based on Tolkien's Fourth Age material.
Viking Invasion II (RTW)
A community-remake of the critically acclaimed Medieval (I) expansion 'Viking Invasion', now running on the Rome engine.
Bellum crucis is better then stainless steel Imho. Stainless steel looks like an huge and messy compilation of mods to me. Bellum crucis have better graphic, less demanding on hardware, better balance and historical accuracy.
Nobody knows it because it's in italian and they don't even have a subforum on Twcenter, but it's awesome. There is an english translation so feel free to try

About the arcade thing, yeah vanilla RTW was really silly in the historical accuracy and balance. 1 minute long battles and all factions messed up with silly units, balance and anachronistic things like LOLSPARTANS and xerxes persians with purple pijamas.
But i think they are improving over time, Etw and shogun 2 are more historically reasonable for example.
I'm not satisfied with their last titles just because they keep releasing them bugged as shit and they turned more and more commercial (less support for mods and all those silly units and factions DLC that should be avaiable for free with the main game). Probably we will never see something like Europa Barbarorum for shogun 2 or Etw, they are too hard to mod.
Anyway, now i just wait 1 year after they realease something. I tried shogun 2 yesterday and it's awesome without bugs and with all expansions and dlcs .
