This is my own personal recipe modified from a few other recipes that I didn't think quite turned out the way I wanted. I make this about once a week and it's amazing.
Will need 3 bowls, in the largest bowl lightly stir together:
*2 Cups Flour
*1 tsp Baking Soda
*1/2 tsp Salt
in 2nd largest bowl, mix together in blender:
*1/2 Cup Butter (at room temperature, or melted even)
*1 Cup Sugar (I use half white, half brown sugar, the brown sugar seems to keep the bread moister).
After mixing Butter/Sugar, add 2 eggs, 1 at a time, and lightly mix together into 2nd bowl
In the 3rd bowl mash up:
*2 or 3 very ripe bananas
*1 tsp vanilla
Combine the 3rd bowl (with bananas) into the 2nd bowl (with eggs/sugar) and mix together. Then combine the 2nd bowl into the 1st bowl of Flour and mix until ingredients are combined.
Fold in 1 Cup of Chocolate Chips (can substitute 1 Cup of nuts like almonds or walnuts, or go 1/2 Cup nuts, 1/2 Cup chocolate chips)
Grease a loaf/bread pan (about 12" x 5" x 4" H) and pour contents of bowl in.
Bake at 350 degrees for about 75 minutes (you'll need to experiment with the timing, and keep an eye on it after about 65 minutes).
