After being knocked down by a horse or a weapon, double tap a or d quickly, but don't press anything else. For example if you try to block at the same time, your roll. Rolling works fine once you get a hold of it.

Supertap. Tap like your stabbing your archnemesis. Tap as it depends on your life.
Just slam the A or D key when you see the dude get the slightest inch down after hit.
