Any suggestions on what kind of gaming rig should I build? I've got upto 2000€ to spend on it,  case, mouse and monitor need not to be included.

intel i7 or i9 CPU
Asus motherboard (sata6, usb3)
4-8GB of Lowest latency ram available.  more ram does not a good gaming machine make.  faster ram (high bus speed & low latency) will outperform other slower ram in more quantities.
Nvidia video card

those are good guidelines to build around.  I buy all my stuff from newegg.com as they have the best overall service.  Good prices, great selection and search features, prompt delivery, flawless RMA when needed.

Motherboard: Asus P8P67 Pro, Rev 3.0, LGA1155, Intel P67, DDR3, USB
Graphics card(2 of these): Palit GeForce GTX 570 Sonic, 1280MB GDDR5, 2xDVI/HDMI/D
CPU: Intel Core i5 2500K, LGA1155, 3.3 GHz, 6MB
RAM: G.Skill 8GB Dual Kit Ripjaws-X, DDR3 1600MHz, CL 8-8-8-24
Total cost was 1600 euros. They're building it for free, one less thing to worry about.

And some other stuff, I can't be arsed to copy paste unless you really want to know.
I highly recommend a 2500k or 2600k as a CPU, they're the best in the market atm, 2600k is a little better(nothing you'd notice). They can be overclocked like crazy.

With that budget I'd go with 8 RAM, just because it's cheap and future proofing is nice.
Also, I'd go with either a Z68 or P67 motherboard.
If getting 2 graphics card make sure it's cooled somehow. You don't want a computer meltdown the first month ;)

But, I'm not an expert. Better find someone who knows better

Recommendation on those Cpus is absolutly right.
Best buy by far atm.

8GB of Ram is absolutly nice, got 1600 mhz and you can do several things @ once, no problem. Dont forget ur 64 bit OS!

About GFX, well, depends what u are going to play on what screen.
Got myself a 32" and id say SLI isnt necessary. Get an OC 580 from EVGA.

Get good coolers, get an SSD harddrive of the latest gen, but make sure your board fully supports it!

PSU - I highly recommend some articles first!!!
Tomshardware might provide some.

I was thinking of getting a real good watercooling system and a i5 2500k to OC it to around 4.6-4.8ghz, I have a HAF 932 case atm and I think its ventilation is more than sufficent, now I need to decide what kind of ram and what graphic card(s), I can up the overall money im ready to spend to 2500€, I want a gaming beast

you dont need watercooling unless you have multiple overclocked piece of hardware or some crazy multi cd-burner/hard drive setup.

Any normal stock hardware air cooling is fine if you have decent fans and arent a cheapshit with AC during hot weather

I decided i'll go with i7 2600k. Any suggestions on the motherboard? So many choices

You can save about $100 if you buy the i5 2500k.  Only real difference between the two is that the i7 has hyperthreading, which really has no impact on games (most games barely utilize two cores, let alone 8).  Perhaps if you do a lot of 3D rendering or super high resolution photoshop projects and video editing it might be worth the upgrade, but I'd save your money.
