i want to be a onehanded cavalry with a warhorse or a large warhorse but my question is: does the range make a big difference from a large or small horse?

Usually it will be easier with a smaller horse and a longer weapon. Horse size can have a positive impact in some cases however. Like when you just want to bump or to stop another horse. It will not increase your attack range.

Well the large warhorse have a bigger size so its more easy to bump people plus it looks way more sexy then that playmobile pony called warhorse :)
And since your goin for 1h cav then bump and slash makes the large warhorse your best option imo.

Warhorses dont have enough armor or HP to justify their lack of speed. Either go Destrier or Plated Charger. Regular charger is ok if there arent that many ranged units

they do and charger and plated charger are too expansive...

the warhorses are a poor-man's compromise, but really they do suck. Neither fast enough to sneak up on people, nor well armored enough to wade into the thick of shit and actually play the role of tank.
They work, though. I just bought one, and while I bitch about its relative suckiness, it still allows me to at least pretend to be a tank, and frequently too, for it is cheap(ish).

it may be that i just want an armored horse and being able to always ride it and make profet, but that seems impossible and if i want to do that i have to take the cataphract...
