My general quick breakdown of possibilities. I'd probably go a stat-based route unless you want to kinda hybridize into cav or something.
Increased stats route
31 -> +1 stat, save skill point
32 -> +2 stat
Agility Route
33 -> +1 WM, +1 Ath, +1 IF/Shd
34 -> +3 IF/Shd
35 -> +2 IF/Shd, +1? or +1 STR, +1 IF
Strength Route
33 -> +1 PS, +2 IF
34 -> +2 IF, +1 Shd
Skills route
Riding - Occasional Lance C
31 -> +3 Rid
32 -> +3 Rid
33 -> +1 Rid, +2 IF/Shd
General Improvement
31 -> +2 Shd, +1 IF
32 -> +3 IF
33 -> Maxed useful skills, some riding or stats

make build for 34 lvl :)

Your build qualifies nicely for cavarly hybrid.
You shouldn't go dedicated melee in my opinion because you have quite a broad skillset already (IF, Shield for hoplite). Most good melee builds convert more skills to attributes, at least in my experience. A really good polearm build would be:
Level 35 (180 977 644 xp)
Strength: 18
Agility: 27
Skills to attributes: 10
Ironflesh: 2
Power Strike: 6
Athletics: 9
Weapon Master: 9
Polearm: 198
Best with Long Voulge, and even good with high ping. If you don't want to go till 35, cut off IF first and WM next.
But anyways, since you skilled shield already, I really suggest to go for cavalry instead.

another polearm user/abuser...
If you insist on continuing this route go for 18 str and stay as a hoplite. 3 riding isn't enough to be cav these days, and cav is shit tier class now thanks to people complaining and devs nerfing.

It is quite simple really. If you wanna make lancer, go for 18-21, if you wanna be infantry - go 21-21.

I was thinking about going to 31 and converting all the attributes to skill and going to 6 riding

Heres a perma-peasants view:
Convert now, take the shield skill,
Then convert at 31 take the ironflesh
(reverse these if you mainly a polespammer, not hoplite)
then retire at 32.
'Cause high lvl builds are fun and all but if you wanna go cav you can play hoplite to 32, with the gold you got bye then and the 2 loompoints from retiring you can buy a nice Champion pony of your choice. Of all items, the most expensive from an upkeep perspective are the most sensible to get +3 since you get a better item for same price.
So go to 32 and breed a champion stallion, then crush peasants underfoot with your fiery steed next gen. Its not like it takes long to lvl up with the new perma x2 multi system for players below lvl 25.

Oh snap, I didn't realize you had the skill and stat point from turning 30. Decrease all of the levels in my first post response by 1!

Get to 18 str ASAP. Take 1 more PS then relax have fun and stack IF.
