I really dont get why 3d pictures/scanning isn't used for game asset production, we are only just starting to see it be adopted even tho its like the most expensive part of AAA game production AFAIK.

Because it's a long way from a point cloud to a 3d model with reasonable polycount that deforms well in animation?
Also, considering environments, the real world is mostly comprised of boring empty landscapes that wouldn't support gameplay well.

They are going to scan the entire planet with those drones and make a game out of it? What a deeply terrible and pointless idea. Nobody even has a problem that game locations are not exactly the real world locations, if anything I prefer a game world tailored to the game. If this works so easily as they claim I bet putting New York or any famous locations in a 3D engine and letting people fly around in it like some super advanced Google Earth tourist mode could definitely be a product with more money potential than this game idea.

there is a game being made that's using it for environments which look actually photorealistic, but I didn't bookmark it and I cant remember what its called.

Why not just buy Hi-res pictures instead of spending years scanning terrain..
I don't see the game in this. A photosourced height maps does not equal a playable map, let alone pictures of cities and towns.

Did I say it's impossible? You asked why it's not more often used in game asset creation and I told you why. It's a good method if you want extremely realistic models, but for most games, those are not necessary or even feasible.
