First to 3 means you will get maps were after the autobalanced first round, one team only needs to win 2 in a row to move to the next map. Might be a bit short, and doesn't allow time for the opposition team to get a team balance to happen so they can have a comeback (or to switch tactics after seeing them fail enough). For me the best of 7 is OK. It only drags for me on maps that are genuinely not designed that well or you have people wasting time at the end of rounds.
Haven't tried first to 6, but I imagine with few players on it would be a good reason to leave the game on a map you don't like. I think first to 6 should be reserved for certain maps when there are loads of players on
