Ads are based on your google search history, clicking behavior and also where you have been on the web. Virtually all major sites store third party cookies that allow third party data mining entreprises to follow you and try to determine what ads are you likely to click on.

What is beyond my understanding here is that following this logic, people that click on internet ads actually exist, as quite an industry is developping based only on that demographic.

Use NoScript add-on for firefox: no adds and it also blocks google-analytics from seeing on what sites you are on (or thats what I want to believe). Takes some effort to allow the scripts you want to use tho.

Well, i once clicked an ad for a real-estate agency, that actually lead me to finding a decent flat to rent.

Dunno if it actually works though. I disabled adblock for c-rpg.net and I get ads for Bioshock Infinite, random fantasy games & army recruitment ads (Like games? You'll LOVE war)
