We see them in many old paintings and in old stories so they must be real. the lack dragons go against historical texts

Maybe it's the way past human cultures decided to explain dinosaur fossils, and the legends created out of random finds have endured to this day. Or maybe its some primal psychological throwback to when mammals were small furry snacks for lizards and the shape of a gigantic reptile as a symbol of fear and power is etched into our racial memory.
Anyways a bunch of cultures have traditions and myths dealing with dragon or dragon-like creatures, so they evidently evolved in parrallel. But then again so have things like worship of anthropomorphic spirits/gods or other fantastical creatures, and they don't exist either, as far as we can tell. Humans have too much of a weird imagination. We should totally get our genetic scientists on the ball figuring out how to custom create a real life friging dragon though, thatd be sweet.

People probably believe in dragons because they where starving, so they everythin that seems edible. The whole world was tripping balls on magic mushrooms during earlier times of history.

I think oberyn nailed it.  My assumption is the same as his, people talking about Dragons was probably fossils they found of massive winged dinosaurs. 

Alternative theory is that somehow ancestors that were around when dinosaurs were becoming extinct (or maybe there was still some massive winged creatures alive long after dinosaurs) and the stories were passed down from generation to generation.

Finally, it's possible that there was at one point something resembling "Dragons" in the world.  Lots of things become extinct over the billions of years Earth has been around, it's certainly possible.  Although I would highly doubt the plausibility of breathing fire.

That fact is that most human myths have a shed of truth to them. Dragons probably did exist in some form. As mentioned probably a dinosaur fossil.
