You should make a skip the fun character, they go right to level 30 and you can respec their stats every week and keep all your gold/items every time you respec. Then you could just switch between 1h, lance, 2h, thrower cav etc to try them all out.
My main character is a terrible 2h 21/18 build and after I stopped retiring I put 3 skill points in riding so I can use a rouncey. Swinging a great axe from a horse is pretty fun and when my horse inevitably dies I can hit the ground fighting with my 6 athletics. I usually go with a lance/heavy bastard sword combo.
