Not sure how much research u guys have done on this, but while I was digging around for info about polymock, and I found this video about the mini games in GW2.

While not much is mentioned about polymock, it does provide some good info about the other activities. I remember seeing the target shootout place in Divinity's Reach and the Polymock arena gate in Rata Sum. I enjoyed polymock in GW, but it sounds like it will be re-made which will be interesting to find out. Here is also a Q&A about it as well.

I know its a bit outdated, but still gives the only info about polymock.

Oh man can't wait for bar brawl... I don't think it was open for the tests even.
