Almost any of them . Tolkiencraft II is not bad. It takes place in Middle Earth(you need to make some missions to unlock the portal to middle earth) and there are npcs and stuff.
Most popular one is Skycraft 2 but thats boring as fuck.
Just download modpack launchers and pick one that looks interesting to you.
3 modpack launchers which contain good modpacks :

Technic Launcher
FTB Launcher

I also can recommend Infinity Pack in FTB . There is something called expert mode (you need to use some commands in the chat to unlock it) Which is basically harder crafting recipers and alot more.

And how do you get Tolkiencraft to work, it seems to be a mess right now and I end up with a half empty world, and completely outdated tutorials.

Well, I just checked a couple of mods out and every one of them is for a different version of Minecraft. That seems kinda shitty, wish they would just update their mods for 1.9

I recommend Feed the Beast highly, very good modpacks (giant modpacks, needs a solid PC).

you may also find some community servers running on the website, and the best, since 3 years of playing with my friend, those modpacks never get boring

Yeah, i figured that out, but I still can't combine mods when they are in different versions. Also, I'd like to use the most recent Minecraft version.

There are several reasons why they wont update to latest version of minecraft.

First and most importantly : New Item ID System 1.9 introduced. Now they all have to change the entire code in order to update or make new modes. Which is rather hard.
Second : New EULA . Now servers can not sell in game items or perks that makes difference in game .( p2w)but only costumizations. So all the servers who uses those technmics to keep their servers up are staying with older version of minecraft. Most modpacks are made by server owners who uses that kind of donation system.
There are probably more reasons but I cant think of anything atm

I would like to join it for sure if you can get some players to get along. Also, I guess you'r from EU, so IDK if the ping would make it impossible for US players like me to play.

It's Minecraft, Ping doesn't matter much. But I'm quite busy with exams at the moment. Maybe we can play in June. I already found a pretty cool mod pack. I will PM you when I start a server.
