Rome, the first one. Or Shogun 2, it's probably the most well rounded of them all, lacking only in troop/culture variety of the other games.

Shogun 2 was fun, but there was a cheat tactic for the AI where they spawn armies out of there assUnlike the previous games, right? More likely, the AI cheating just wasn't so visible, because of the larger, more open world-maps and the larger number of territories each AI faction would be controlling.
I haven't played Medieval 2 but I played a shit ton of Medieval 1. That was really good, nothing like losing half your crusade force to deceases before they reach the middle east.
anyone who enjoys the battle system of M II might want to check out a very old game thats pretty similar and rly fun, Warhammer: Dark Omen
